Cow Chip Cookies

Cow Chip Cookies


Ingredients:

1 Cup of salted butter

¾ Cup brown sugar

½ Cup of sugar

3 Large eggs

2 tsp Vanilla extract

2 ¾ Cups of flour

1 tsp Baking powder

1 tsp Baking soda

½ tsp Salt

2 Cups chocolate chips (or your choice of any chip flavor or a combo)

1 Cup of quick oats

¾ Cup of walnuts or pecans (I especially like macadamias, but usually don’t have them in the pantry)

¾ Cup of unsweetened coconut flakes

Makes 12 large cookies or 24 small cookies. I always double the recipe for my crew.



Instructions:

Preheat oven to 400 degrees. Line baking sheets with parchment paper or use a silicone baking mat.

Mix softened butter, brown sugar and sugar together with electric mixer on low. Add eggs and vanilla and mix together just until blended.

Add flour, baking powder, baking soda, and salt until combined, then add oats and mix just until combined.

Stir in chocolate chips, nuts and coconut. Mix well and divide dough into 12 equal parts. Use your hands and mix into large balls. Place on prepared baking sheets. Place 6 per pan because these are big cookies, thus their name “Cow Chip” cookies.

Bake in 400 degrees oven for 10 to 12 minutes, just until the tops are golden brown for the large size. If you are doing smaller cookies use the same temperature, but cook for less time, approximately 8 minutes depending on your oven.

These are delicious and will remind you of a bakery cookie. Play with the recipe and try different additions. You can’t go wrong! And by all means enjoy eating your cow chip instead of stepping in it!
