Summer Days of Squash 2
As promised, here is another great recipe to help you enjoy the abundance of your garden. This is an easy canning recipe, even for beginners who are new to home canning. Your taste buds will not know what to expect, but these are much like a bread and butter pickle, nice and sweet with a little bit of crunch.
Canning is a great way to enjoy your garden year round, even after winter has set in. Enjoy your bounty and the flavor!
Yellow Squash Pickle
8 cups of squash, sliced thin
2 cups of onions, sliced thin
2 cups of vinegar
4 bell peppers, sliced thin (mix colors for pretty bight pickles)
2 tsp celery seed
2 tsp mustard seed
3 cups of sugar
Salt (sprinkle)
Combine the squash and onions, sprinkle with salt . Set aside for 1 hour. Drain Liquid off. Combine vinegar, sugar and celery seed and peppers in a pan, bring to a hard boil. Add squash and onions and mix well. Pack into jars , clean top and seal. Process in water bath for 10 minutes.
