Summer Days of Squash #3

This is a fairly easy squash recipe and you can make it with yellow squash or zucchini squash. I like it mixed. I like adding green cabbage also. It is very easy and very tasty. You can change up the herbs to suit what you want it to accompany. If you are having an Italian meal you could use oregano. If you are having a Mexican meal you could add a little cumin and cilantro. The unhealthy part of me loves a little bacon mixed in because bacon makes everything better, right? Keep it simple or experiment, that’s what makes it fun.

Pan Grilled Summer Squash


1 ½ tsp of olive oil

1 clove garlic, minced

½ tsp. pepper

½ tsp. salt

2 medium chopped onions

½ to 1 cup of fresh basil

2 to 4 squash cut into one- inch diagonal slices

Heat a skillet over medium heat. Once the skillet is hot, add the squash slices, onions and minced garlic. Cook until the squash begins to turn a golden brown. Add the salt and pepper along with the basil and cook for two more minutes.

Remove from heat promptly to prevent squash from becoming mushy. Pour into a bowl and serve.
